Introduction:

Channa (chickpeas) chat is a famous and delicious street food in South Asian countries, like Bangladesh, Pakistan, and India. This dish is one of the leading cart businesses in Asia. It's a dish made from chickpeas (channa), chutneys, herbs, and spices. It's a flavorful snack. Channa Chat is made from boiled chickpeas (channa).

Tamarind Sauce Ingredients:

Tamarind                                            500 grams

Sugar                                                   1 kilogram

Red Chili Flakes                                  3 tablespoons

Salt                                                       1 tablespoon

Red Chili Powder                               1 teaspoon

Cinnamon Stick                                  1 piece

Cloves                                                  3 pieces

Making Sauce:

Before making channa (chickpeas) chats, prepare the chutneys. Warm water in a bowl and soak tamarind for 20 to 30 minutes. Use your fingers to extract the pulp and pass the pulp from the cheesecloth to get the pulp liquid without seeds and stringy material. Place a pan over medium heat with water and put sugar, stir, and wait until the sugar melts. Add pulp liquid and other spices like red chili flakes, salt, red chili powder, and other ingredients. Cook the sauce over low flame for 20 to 30 minutes and stir continuously until the sauce gets thick.

Green Sauce Ingredients:

Green Coriander                               ½ bunch

Mint                                                     1 bunch

Garlic                                                   2 pieces (flower)

Green chili                                          10 pieces

Cumin seed                                        ½ teaspoon

Salt                                                       ½ teaspoon

Black paper Whole                            ½ teaspoon

Mayonnaise                                        ½ cup

Yogurt                                                  ½ kilogram

Coconut Milk or Powder                   4 tablespoons

Making Green Sauce:

Prepare the green sauce for channa (chickpeas) chat. Wash the mint, green coriander, and green chili. Put the ingredients in the blender like green coriander, mint leaves, without stem green chilies, salt, cumin seeds, black pepper whole, coconut milk, or powder. To get a smooth mixture blend the sauce well. Add yogurt and mayonnaise and blend a little. Check the seasoning and adjust the taste.        

Masala Ingredients:

Cumin seed                                       1 tablespoon

Red chili Whole                                 10 pieces

Fennel Seed                                       2 tablespoons

Chat Masala                                       As Required

Salt                                                      As Required

Making Masala:

To make masala we just have to mix some ingredients together. Take fennel seed, cumin seed, and red chili whole. Crush the ingredients and add chat masala and salt. Mix well to get the flavor.

Filling Ingredients:

Channa (chickpeas)                          500 grams

Onion                                                  250 grams

Tomato                                               250 grams

Green Chili                                         100 grams

Mint                                                     4 tablespoons

Green Coriander                               4 tablespoons

Potato                                                 ½ kilograms

Making Filling:

After making sauces now it’s time to get the filling ready to make Channa (chickpeas) chat. Boil the chickpeas (channa) until they are tender. Cut the onion and green chili in Julian's cutting. Cut tomatoes into cubes and extract seeds. Chop green coriander and the mint leaves. Boil potatoes and cut into cubes.

Tarka Ingredients:

Oil                                                       2 tablespoons

Butter                                                 4 tablespoons

Brown Sugar                                     1.5 tablespoons

Masala                                                2 tablespoons

Black pepper                                     2 tablespoons

Channa (chickpeas)                         500 grams

Cooking:

After making chutneys, masala, and falling it’s time for tarka. add oil to a pan and put it on medium flame. Heat the oil and add black pepper, and chickpeas (channa). Cook for 2 to 3 minutes add masala brown sugar and butter and cook for 2 minutes. Now take it down from the flame. Mix the Tarka with other filling ingredients like green coriander, green chili, mint leaves, tomatoes, and potatoes in a bowl. Your channa (chickpeas) chat is ready to serve.

Serving:

When this delicious dish is ready it’s time to serve. Set the table with plates and spoons. Also, keep some water on the table. Serve with the sauces made for the dish. According to taste add sauces and enjoy the food. Make sure don’t waste food.
