Preparation:
Before Making Rajasthani Chicken Handi
we have to prepare the recipe. In a bowl, put
the chicken pieces which are cut into
cubes. Add yogurt, ginger-garlic paste, turmeric
powder, red chili powder, black
pepper, red chili flakes, salt, and other items for
marination. Add roasted and crushed
dry coriander, cumin seed, and fennel seed. Add
yogurt and karahi masala.
Mix everything until the chicken is
coated evenly with the mixture. Cover the bowl with
plastic wrap or a lid. Put the bowl in
the refrigerator and let the chicken marinate for at
least 30 minutes. This helps the
chicken soak up all the flavors and makes the chicken
much more flavorful. After 30 minutes,
your marinated chicken is ready to be cooked in
your Rajasthani Chicken Handi recipe.
This marination procedure ensures that

Cooking:
After the marination take the chicken
out of the refrigerator and, then it's time to make
Rajasthani Chicken Handi. Heat oil or
ghee in a heavy-bottomed pan or handi over
medium heat for some period of time
until the oil gets hot.
Add chopped onions to the pan. Sauté
until they turn golden brown. Add ginger-garlic
paste and sauté for some time until
the raw smell disappears. Add chopped tomatoes.
and cook until they
become soft, and the oil starts separating from the
masala.
Add the chicken along with
the marinade to the handi. Mix well chicken with
the onion-tomato masala. Cook the
chicken for 5-7 minutes at medium flame. Cook the
chicken until it changes color
slightly. Check and stir occasionally to ensure even
cooking.
After that, lower the heat, cover the
handi, and let the chicken cooked in the
yogurt-spice marination for about
20-25 minutes or until it becomes tender and the
aroma of the chicken starts coming.
Stir occasionally to avoid sticking.
Once the chicken is cooked and tender,
check for seasoning and adjust salt or other
spices if needed. When tender and
juicy Rajasthani Chicken Handi is ready, then it's
time to add some garnish. Garnish the
Rajasthani Chicken Handi with freshly chopped
coriander leaves, garlic (Julian
Cutting), and kasuri methi (if using).
