Kheer (Rice Pudding)

Introduction:

Kheer (rice Pudding) is a traditional dish from South Asian Countries, which is enjoyed in countries like Bangladesh, Nepal, Pakistan, and India. Kheer (rice pudding) is a creamy rice pudding made with steamed rice, sugar, and milk. It is flavored with cardamom, and saffron, and garnished with dry fruits and nuts. This creamy rice pudding is the majority dessert in South Asian cuisine. It is served on many festive occasions, parties, and Eid celebrations. Kheer (rice pudding) is rich in flavors, creamy texture, and full of sweetness which makes it a favorite choice for celebration and festive gatherings. Variations of kheer (rice pudding) include different ingredients like vermicelli, millet, rose water, and dry fruits. Kheer (rice pudding) is served as an appetizer or as a dessert after dinner or lunch.

Ingredients:

Rice                                                                                                     1/2 cup

Milk                                                                                                     1 litter

Ghee                                                                                                   1 tablespoon

Pistachio                                                                                             3 tablespoons

Cashew                                                                                               4 tablespoons

Almond                                                                                                2 tablespoon

Resin                                                                                                   1 tablespoon

Milk Powder                                                                                        ½ tablespoon

Cardamom                                                                                          2 pieces

Water                                                                                                  ½ cup

Sugar                                                                                                  ½ cup or as required

Cooking:

To prepare Kheer (rice pudding) take banaspati rice. Wash the rice well until the rice is clean. Blend the rice a little bit so the rice cuts into pieces. Soak the rice in a bowl for half an hour and then scoop out from the water in the Steiner and let it dry.  Now take a blender and add 2 tablespoons of soaked rice, milk powder, 2 tablespoons of cashew, and 2 tablespoons of milk. Blend the ingredients well to make a smooth paste. Place a pan on low flame and add ½ cup of water and milk. Let it on the flame until the milk boils. We will fry the dry fruits on low flame until the milk boils. Place another on the flame and add ghee. Let the ghee heat up on low flame and then add 1 tablespoon of dry fruits like pistachio, cashew, and almond. Do not fry raisins along with other dry fruits.

Add the fried dry fruits and soaked rice to the milk on medium flame. Add the blended paste to the milk, and cardamom from one side open and stir continuously. Cook on medium to low flame for 8 minutes so the kheer (rice pudding) starts thickening. Now add sugar and raisins and cook for 3 minutes on low flame. After cooking for 3 minutes check the thickness of kheer (rice pudding). Turn the flame off and scoop out in a large bowl or a dessert pot. Garnish with remaining sliced dry fruits (pistachio, cashew, and almond). Let it cool down according to the room temperature and place it in the refrigerator for 1 or 2 hours. Yummy and creamy texture kheer (rice pudding) is ready to serve your loved ones.

Serving:

After Cooling well now serve this delicious and yummy dish with your family. Set table with dessert bowls, spoons, and water. Scoop out an equal quantity of kheer (rice pudding) in each bowl and share with the musketeers.
